  • 1 bunch fresh cilantro, chopped
  • 2 limes, cut into wedges
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon cumin (optional)
  • 1 avocado, sliced (for serving)

Instructions

Creating Caldo de Pollo is straightforward when you follow these steps:

  1. Prepare the Chicken: Rinse the chicken pieces under cold water and place them in a large pot.
  2. Add Water: Pour in the 10 cups of water and bring it to a boil over high heat.
  3. Skim the Foam: As the water heats, skim off any foam that forms on the surface using a spoon.
  4. Add Aromatics: Once boiling, reduce the heat to medium and add the quartered onion, minced garlic, and salt. Simmer for 30 minutes.
  5. Add Vegetables: Incorporate the sliced carrots, diced potatoes, corn, and bell pepper. Stir gently and cook for another 10 minutes.
  6. Add Remaining Ingredients: Add the zucchini, green beans, and cumin if desired. Stir and continue cooking for an additional 10-15 minutes until all vegetables are tender.
  7. Adjust Seasoning: Taste the broth and adjust the seasoning with additional salt and pepper if needed.
  8. Finish with Cilantro: Just before serving, stir in the chopped cilantro for added freshness.
  9. Serve Hot: Remove from heat and allow it to cool for a minute. Ladle into bowls.
