Ingredients

Scale
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup cooked chicken, shredded (optional)
  • 1 cup bell peppers, diced (any color)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Cooking spray or additional oil for frying
  • Black olives (for facial decorations, optional)

Instructions

Creating Jack o Lantern Quesadillas is a straightforward process that results in a fantastic meal. Follow these steps:

  1. Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and a pinch of salt and pepper. Sauté for about 3-5 minutes until they soften.
  1. Add Chicken: If using, add the shredded chicken to the skillet along with cumin and paprika. Stir and cook for another 3-4 minutes until heated through. Remove from heat.
  1. Cut Out the Faces: Take two tortillas and use a sharp knife or cookie cutter to cut out jack o lantern face shapes. You can get creative with different expressions!
  1. Assemble the Quesadillas: On the whole tortilla, sprinkle shredded cheese generously. Layer the pepper and chicken mixture over the cheese. Top with another layer of cheese on top.
  1. Top It Off: Place the cut-out tortilla (with the jack o lantern faces) on top of the assembled quesadilla.
  1. Cook the Quesadillas: Spray a large skillet with cooking spray or add a little oil. Heat over medium heat. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes until golden brown. Gently flip and cook for an additional 2-3 minutes until the other side is also golden and the cheese is melted.
  1. Repeat: If making multiple quesadillas, repeat the cooking process for the remaining tortillas.
  1. Slice and Serve: Once cooked, remove from the skillet and allow to cool slightly. Cut into wedges and garnish with black olives for extra facial decoration if desired.
